Description
Traditional Roman style fried artichokes that bloom open and turn golden and crisp while remaining tender inside.

- 4 fresh globe artichokes
- 1 lemon
- 3 cups vegetable oil for frying
- 1 teaspoon salt
- 1/2 teaspoon black pepper, optional
Instructions
- Fill a bowl with water and add lemon juice.
- Trim artichokes by removing tough leaves, trimming stem, and cutting off top portion. Snip sharp tips.
- Place trimmed artichokes in lemon water.
- Spread leaves apart and gently flatten.
- Heat oil to 300 degrees Fahrenheit and fry artichokes 8 to 10 minutes until tender.
- Increase oil to 375 degrees Fahrenheit and fry again 2 to 3 minutes until crisp and golden.
- Drain and sprinkle with salt before serving.
Notes
- Choose firm, fresh artichokes.
- Fry twice for maximum crispness.
- Serve immediately for best texture.
- Reheat in oven if necessary.
