Description

Traditional Roman style fried artichokes that bloom open and turn golden and crisp while remaining tender inside.


Ingredients

  • 4 fresh globe artichokes
  • 1 lemon
  • 3 cups vegetable oil for frying
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, optional

Instructions

  1. Fill a bowl with water and add lemon juice.
  2. Trim artichokes by removing tough leaves, trimming stem, and cutting off top portion. Snip sharp tips.
  3. Place trimmed artichokes in lemon water.
  4. Spread leaves apart and gently flatten.
  5. Heat oil to 300 degrees Fahrenheit and fry artichokes 8 to 10 minutes until tender.
  6. Increase oil to 375 degrees Fahrenheit and fry again 2 to 3 minutes until crisp and golden.
  7. Drain and sprinkle with salt before serving.

Notes

  • Choose firm, fresh artichokes.
  • Fry twice for maximum crispness.
  • Serve immediately for best texture.
  • Reheat in oven if necessary.
