Description

A crisp flatbread topped with sweet caramelised onions, creamy blue cheese, and fresh thyme, baked until golden and perfectly balanced with sweet and savory flavors.


Ingredients

  • 1 large flatbread, about 10 inches
  • 2 large yellow onions, thinly sliced, about 500 grams
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 100 grams blue cheese, crumbled
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 200 degrees Celsius and line a baking sheet with parchment paper.
  2. In a large skillet over medium heat, add olive oil and butter. Once melted, add sliced onions and salt, stirring to coat.
  3. Reduce heat to medium low and cook onions for about 20 minutes, stirring occasionally, until soft and deeply golden.
  4. Place flatbread on the prepared baking sheet. Spread caramelised onions evenly over the surface. Sprinkle blue cheese and fresh thyme on top. Finish with black pepper.
  5. Bake for 10 to 12 minutes until edges are crisp and cheese is slightly melted.
  6. Remove from oven and let rest for 2 minutes before slicing and serving.
