- 1 large flatbread, about 10 inches
- 2 large yellow onions, thinly sliced, about 500 grams
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 100 grams blue cheese, crumbled
- 1 teaspoon fresh thyme leaves
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Preheat oven to 200 degrees Celsius and line a baking sheet with parchment paper.
- In a large skillet over medium heat, add olive oil and butter. Once melted, add sliced onions and salt, stirring to coat.
- Reduce heat to medium low and cook onions for about 20 minutes, stirring occasionally, until soft and deeply golden.
- Place flatbread on the prepared baking sheet. Spread caramelised onions evenly over the surface. Sprinkle blue cheese and fresh thyme on top. Finish with black pepper.
- Bake for 10 to 12 minutes until edges are crisp and cheese is slightly melted.
- Remove from oven and let rest for 2 minutes before slicing and serving.
