- 3/4 cup heavy cream
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a mixing bowl, combine flour, 1/4 cup granulated sugar, salt, and cold butter. Rub together until the mixture becomes crumbly.
- Press the mixture evenly into a 9 inch tart pan, covering the base and sides.
- Bake the crust for 15 to 18 minutes until lightly golden. Let cool completely.
- In a heavy bottom saucepan over medium heat, melt 1 cup granulated sugar until it turns deep amber in color.
- Carefully stir in 1/2 cup butter until melted and combined.
- Slowly pour in heavy cream while whisking continuously. Cook for 1 to 2 minutes until smooth, then remove from heat and stir in vanilla extract.
- Pour the caramel into the cooled crust and spread evenly.
- Sprinkle chopped mixed nuts over the caramel layer.
- Drizzle with melted dark chocolate if using.
- Refrigerate for at least 2 hours until fully set before slicing and serving.
