Description

Roasted asparagus topped with cherry tomatoes, fresh mozzarella, basil, and balsamic glaze for a fresh caprese inspired side dish.


Ingredients

  • 1 pound fresh asparagus, trimmed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup mini mozzarella balls
  • 1 tablespoon balsamic glaze
  • Fresh basil leaves

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Toss asparagus with olive oil, salt, and black pepper.
  3. Roast 10 to 12 minutes until tender.
  4. Transfer to platter and top with cherry tomatoes and mozzarella.
  5. Drizzle with balsamic glaze and add fresh basil.
  6. Serve warm or at room temperature.
