- 2 cans (400 grams each) chickpeas, drained and rinsed
- 200 grams feta cheese block
- 1 1/2 cups cherry tomatoes
- 3 cloves garlic, thinly sliced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 2 cups fresh spinach, roughly chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 200 degrees Celsius.
- Add chickpeas and cherry tomatoes to a baking dish.
- Drizzle with olive oil and sprinkle with oregano, red pepper flakes, salt, and black pepper. Toss gently.
- Place feta block in the center and top with sliced garlic.
- Bake for 25 to 30 minutes until tomatoes burst and feta is soft and slightly golden.
- Remove from oven and stir gently to combine feta with chickpeas and tomatoes.
- Add spinach and allow it to wilt from the heat.
- Sprinkle fresh parsley on top and serve warm.
Notes
- Use a snug baking dish for best texture.
- Add spinach after baking to keep it vibrant.
- Taste before adding extra salt since feta is salty.
