Description

Tender chickpeas baked with creamy feta, juicy cherry tomatoes, and garlic in a rich olive oil sauce. A comforting Mediterranean-inspired dish perfect with bread or pasta.


Ingredients

  • 2 cans (400 grams each) chickpeas, drained and rinsed
  • 200 grams feta cheese block
  • 1 1/2 cups cherry tomatoes
  • 3 cloves garlic, thinly sliced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 2 cups fresh spinach, roughly chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 200 degrees Celsius.
  2. Add chickpeas and cherry tomatoes to a baking dish.
  3. Drizzle with olive oil and sprinkle with oregano, red pepper flakes, salt, and black pepper. Toss gently.
  4. Place feta block in the center and top with sliced garlic.
  5. Bake for 25 to 30 minutes until tomatoes burst and feta is soft and slightly golden.
  6. Remove from oven and stir gently to combine feta with chickpeas and tomatoes.
  7. Add spinach and allow it to wilt from the heat.
  8. Sprinkle fresh parsley on top and serve warm.

Notes

  • Use a snug baking dish for best texture.
  • Add spinach after baking to keep it vibrant.
  • Taste before adding extra salt since feta is salty.
