- 3 to 4 pounds beef brisket, trimmed
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 2 large yellow onions, sliced
- 4 cloves garlic, minced
- 2 cups apple cider
- 1 cup beef broth
- 1 tablespoon Dijon mustard
- 3 sprigs fresh thyme
- 3 large carrots, cut into chunks
Instructions
- Preheat oven to 325 degrees Fahrenheit.
- Pat brisket dry and season evenly with salt and black pepper.
- Heat olive oil in a large Dutch oven over medium high heat.
- Sear brisket on both sides until deeply browned, then remove and set aside.
- In the same pot, sauté sliced onions until softened.
- Add minced garlic and cook for 1 minute.
- Stir in apple cider, beef broth, and Dijon mustard, scraping up browned bits from the bottom of the pot.
- Add fresh thyme sprigs and carrots.
- Return brisket to the pot, ensuring the liquid comes about halfway up the meat.
- Cover tightly and transfer to the oven.
- Braise for 3 to 3 1/2 hours until fork tender.
- Remove from oven and let rest for 15 minutes before slicing against the grain.
- Spoon sauce and vegetables over sliced brisket and serve warm.
