Instructions
- Preheat your waffle iron and lightly grease it.

- In another bowl, beat the eggs, almond milk, vanilla, maple syrup, and melted coconut oil.
- Pour wet ingredients into the dry ingredients and mix until smooth. Let batter rest for 3–5 minutes.
- Pour batter into the preheated waffle iron (about 1/3 to 1/2 cup per waffle) and cook for 3–5 minutes until golden brown.
- Allow waffles to rest for a minute before removing them from the waffle iron.
- Serve warm with desired toppings.
