- 1/2 cup chopped walnuts
- 1/2 cup chopped pistachios
- 1/3 cup honey
- 2 tablespoons coconut oil, melted
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 teaspoon orange zest, optional
Instructions
- Preheat the air fryer to 325°F if your model requires preheating.
- In a large mixing bowl combine the old fashioned rolled oats, chopped walnuts, chopped pistachios, ground cinnamon, and salt.
- In a separate small bowl whisk together the honey, melted coconut oil, vanilla extract, and orange zest if using.
- Pour the wet mixture over the oat and nut mixture and stir until everything is evenly coated.
- Line the air fryer basket with parchment paper and spread the granola mixture evenly in a thin layer.
- Cook for 8 to 10 minutes, stirring gently halfway through, until golden brown and fragrant.
- Allow the granola to cool completely in the basket so it crisps up fully.
- Break into clusters and store in an airtight container.
