Description

Ingredients

  • 1 cup plain hummus
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. Before draining, reserve about 1 cup of the pasta cooking water.
  3. Drain the pasta and return it to the same pot over low heat.
  4. Add the hummus, olive oil, minced garlic, and fresh lemon juice to the warm pasta.
  5. Pour in 1/4 to 1/2 cup of the reserved pasta water and stir continuously until a smooth and creamy sauce forms that coats the pasta evenly.
  6. Season with salt and black pepper to taste and adjust the lemon juice if needed.
  7. Serve immediately while warm and creamy.
