Description

Creamy, fruity bite-size truffles made with fresh strawberries, cream cheese, graham crackers, and chocolate, perfect as an elegant no-bake dessert or gift.


Ingredients

  • 1 cup fresh strawberries, hulled and chopped
  • 4 oz cream cheese, softened
  • 1 cup crushed graham crackers
  • 8 oz chocolate (dark or milk), melted


Instructions

  1. Line a baking sheet with parchment paper and make space in the fridge for chilling.
  2. Puree 1 cup hulled and chopped strawberries in a food processor until smooth.
  3. In a mixing bowl, beat 4 oz softened cream cheese until creamy, then fold in the strawberry puree until evenly combined.
  4. Fold 1 cup crushed graham crackers into the strawberry and cream cheese mixture until a cohesive, slightly firm mixture forms.
  5. Cover the mixture and refrigerate for at least 1 hour to firm up.
  6. Using a small scoop or spoon, portion the chilled mixture and roll into 16 bite-sized balls between your palms.
  7. Melt 8 oz chocolate in a double boiler or microwave in short bursts, stirring until smooth.
  8. Dip each truffle into the melted chocolate, tapping off excess, and return to the parchment-lined sheet.
  9. Chill dipped truffles in the refrigerator until the chocolate is fully set, about 15–30 minutes.
  10. Serve chilled or store in an airtight container in the fridge.

Notes

  • Use ripe but firm strawberries to avoid excess liquid in the mixture.
  • Chill the mixture thoroughly before rolling to make shaping easier.
  • If chocolate seizes, add a teaspoon of neutral oil or a small splash of cream to smooth it.
  • For variety, roll truffles in shredded coconut, crushed nuts, or cocoa powder instead of dipping in chocolate.
