Description
Creamy, fruity bite-size truffles made with fresh strawberries, cream cheese, graham crackers, and chocolate, perfect as an elegant no-bake dessert or gift.
Ingredients
Scale
- 1 cup fresh strawberries, hulled and chopped
- 4 oz cream cheese, softened
- 1 cup crushed graham crackers
- 8 oz chocolate (dark or milk), melted
Instructions
- Line a baking sheet with parchment paper and make space in the fridge for chilling.
- Puree 1 cup hulled and chopped strawberries in a food processor until smooth.
- In a mixing bowl, beat 4 oz softened cream cheese until creamy, then fold in the strawberry puree until evenly combined.
- Fold 1 cup crushed graham crackers into the strawberry and cream cheese mixture until a cohesive, slightly firm mixture forms.
- Cover the mixture and refrigerate for at least 1 hour to firm up.
- Using a small scoop or spoon, portion the chilled mixture and roll into 16 bite-sized balls between your palms.
- Melt 8 oz chocolate in a double boiler or microwave in short bursts, stirring until smooth.
- Dip each truffle into the melted chocolate, tapping off excess, and return to the parchment-lined sheet.
- Chill dipped truffles in the refrigerator until the chocolate is fully set, about 15–30 minutes.
- Serve chilled or store in an airtight container in the fridge.
Notes
- Use ripe but firm strawberries to avoid excess liquid in the mixture.
- Chill the mixture thoroughly before rolling to make shaping easier.
- If chocolate seizes, add a teaspoon of neutral oil or a small splash of cream to smooth it.
- For variety, roll truffles in shredded coconut, crushed nuts, or cocoa powder instead of dipping in chocolate.
