Description

A healthy and low-carb twist on pizza, using zucchini boats filled with your favorite pizza toppings and melted cheese.


Ingredients

  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sliced pepperoni or your choice of protein (e.g., cooked chicken, sausage)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup bell pepper, diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds using a spoon to create boats.
  3. Brush the zucchini halves with olive oil and season with salt, pepper, and garlic powder.
  4. Place the zucchini boats on a baking sheet lined with parchment paper and bake for 10 minutes to soften the zucchini.
  5. Remove from the oven and spoon marinara sauce into each zucchini boat.
  6. Top the sauce with shredded mozzarella, pepperoni (or your choice of protein), red onion, and bell pepper.
  7. Sprinkle with dried oregano and return the zucchini boats to the oven. Bake for another 10-12 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh basil leaves before serving.
