- 3/4 cup granulated sugar
- 1 tbsp orange zest
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup fresh orange juice
- 1/2 cup milk (or buttermilk for extra moisture)
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
- In a large bowl, whisk together the flour, sugar, orange zest, baking powder, baking soda, and salt.
- In another bowl, mix the orange juice, milk, melted butter, eggs, and vanilla extract.
- Gradually fold the wet ingredients into the dry ingredients, stirring gently until just combined (do not overmix).
- Fill each muffin cup about ¾ full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
Notes
- For extra orange flavor, add ½ tsp orange extract.
- Sprinkle with coarse sugar before baking for a crispy top.
- Add chocolate chips or dried cranberries for a twist!
