These White Chocolate Lemon Truffles are a delightful no-bake treat that combines the sweetness of white chocolate with the zesty brightness of lemon. Perfect for spring and summer gatherings, these truffles are easy to make and bursting with flavor.
Ingredients
– 1 cup white chocolate chips
– 1/4 cup unsalted butter
– Zest of 1 lemon
– 3 tablespoons heavy whipping cream
– 1/2 teaspoon lemon extract
– 2-3 drops yellow food coloring (optional)
– 1/4 cup powdered sugar (for coating)
Instructions
1. In a medium, heat-safe bowl, combine the white chocolate chips, lemon extract, and food coloring (if using). Set aside.
2. In a small saucepan over low heat, melt the butter with the lemon zest.
3. Add the heavy whipping cream to the saucepan and increase the heat to medium. Cook just until the mixture begins to simmer, then remove from heat.
4. Pour the hot mixture over the white chocolate chips. Let it sit for a minute, then stir until the chocolate is completely melted and the mixture is smooth.
5. Cover the bowl and refrigerate until the mixture is firm, about 1–2 hours.
6. Once firm, scoop the mixture into small balls and roll them between your hands to form smooth truffles.
7. Roll each truffle in powdered sugar to coat.
8. Store the truffles in an airtight container in the refrigerator until ready to serve.
Notes
– For a different flavor, try substituting the lemon zest and extract with orange or lime.
– These truffles can be stored in the refrigerator for up to one week.
– If the mixture is too soft to roll, refrigerate for an additional 30 minutes.
