- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- 8 oz lasagna noodles, broken into pieces
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until softened.
- Add oregano and basil; cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a boil.
- Add broken lasagna noodles and cook until tender, about 8-10 minutes.
- Stir in shredded chicken and spinach; cook until spinach wilts.
- Lower heat and stir in ricotta, Parmesan, and half of the mozzarella until melted and creamy.
- Season with salt and pepper to taste.
- Ladle soup into bowls and sprinkle remaining mozzarella on top before serving.
Notes
- Use rotisserie chicken for convenience.
- For a lighter version, substitute ricotta with Greek yogurt.
- Add red pepper flakes for a spicy kick.
