Description

Crisp, chilled watermelon cut into fun fry-shaped sticks served with a luscious coconut lime dip that’s creamy, tangy, and tropical. A refreshing no-cook snack that’s ready in minutes and perfect for summer gatherings.

Ingredients

Scale
  • 1 medium seedless watermelon, chilled and cut into fry-sized sticks
  • 1 cup full-fat coconut milk (canned), well stirred
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon finely grated lime zest, plus more for garnish
  • 1 small pinch fine sea salt

Instructions

  1. Chill a mixing bowl for 5 minutes to help the dip thicken nicely.
  2. Whisk the coconut milk, Greek yogurt, honey, lime juice, lime zest, and a pinch of salt in the chilled bowl until smooth and creamy.
  3. Cut the chilled seedless watermelon into even, fry-sized sticks.
  4. Arrange the watermelon fries on a platter and spoon the dip into a small serving bowl.
  5. Refrigerate the dip for about 10 minutes so the flavors meld.
  6. Garnish the dip with a little extra lime zest.
  7. Serve the watermelon fries alongside the coconut lime dip and enjoy cold.

Notes

  • For dairy-free, replace Greek yogurt with coconut yogurt.
  • Adjust sweetness by adding more honey or more lime juice for extra tang.
  • Cut the watermelon close to serving time to keep the texture crisp.
  • Full-fat coconut milk yields the creamiest dip.
