Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 (1 oz) packet taco seasoning
  • 1/2 cup water
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel), undrained
  • 1 (15 oz) can corn, drained
  • 8 small flour tortillas or 6 large ones
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup sour cream
  • Chopped cilantro and sliced jalapeños for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft. Drain excess fat.
  3. Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened.
  4. Add black beans, diced tomatoes, and corn. Mix well and heat through. Remove from heat.
  5. Place 2–3 tortillas on the bottom of the baking dish (tear as needed to cover). Spread half the meat mixture over tortillas, then top with 1/2 cup sour cream and 1 cup shredded cheese.
  6. Repeat layers: tortillas, remaining meat mixture, sour cream, and 1 more cup cheese.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes, until bubbly and golden.
  8. Let rest for 5 minutes before slicing. Garnish with cilantro, jalapeños, or extra sour cream if desired.

Notes

  • Swap ground beef for ground turkey or shredded rotisserie chicken for a lighter version.
  • Add a layer of cooked rice or cooked pasta to make it heartier.
  • For extra spice, mix in chopped pickled jalapeños or hot sauce into the meat mixture.
