- 1 lb ground beef
- 1 small onion, diced
- 1 (1 oz) packet taco seasoning
- 1/2 cup water
- 1 (15 oz) can black beans, drained and rinsed
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel), undrained
- 1 (15 oz) can corn, drained
- 8 small flour tortillas or 6 large ones
- 2 cups shredded cheddar or Mexican blend cheese
- 1 cup sour cream
- Chopped cilantro and sliced jalapeños for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft. Drain excess fat.
- Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened.
- Add black beans, diced tomatoes, and corn. Mix well and heat through. Remove from heat.
- Place 2–3 tortillas on the bottom of the baking dish (tear as needed to cover). Spread half the meat mixture over tortillas, then top with 1/2 cup sour cream and 1 cup shredded cheese.
- Repeat layers: tortillas, remaining meat mixture, sour cream, and 1 more cup cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes, until bubbly and golden.
- Let rest for 5 minutes before slicing. Garnish with cilantro, jalapeños, or extra sour cream if desired.
Notes
- Swap ground beef for ground turkey or shredded rotisserie chicken for a lighter version.
- Add a layer of cooked rice or cooked pasta to make it heartier.
- For extra spice, mix in chopped pickled jalapeños or hot sauce into the meat mixture.
