- 1 cup ladyfinger cookies, finely crushed
- 1/2 cup mascarpone cheese, softened
- 2 tablespoons powdered sugar
- 2 tablespoons strong brewed coffee or espresso, cooled
- 1/2 teaspoon vanilla extract
- 1/2 cup white chocolate chips (for coating)
- 1 tablespoon cocoa powder (for dusting)
Instructions
- In a mixing bowl, combine the crushed ladyfingers, mascarpone cheese, powdered sugar, coffee, and vanilla extract. Mix until well combined and smooth.
- Chill the mixture in the refrigerator for 30 minutes to firm up.
- Once chilled, scoop and roll into small balls using your hands.
- Place the truffles on a parchment-lined tray and freeze for 15 minutes to set.
- Melt the white chocolate chips in a microwave or over a double boiler until smooth.
- Dip each truffle into the melted chocolate to coat, then return to the tray.
- Sprinkle cocoa powder over the top of each truffle before the coating sets.
- Refrigerate for at least 1 hour before serving.
Notes
- For a stronger coffee flavor, add a splash of coffee liqueur like Kahlua to the mixture.
- You can substitute cream cheese for mascarpone in a pinch, though the flavor will slightly change.
- Use dark chocolate for coating if you prefer a richer taste.
