Description

A luscious tiramisu cake combining the classic flavors of espresso, mascarpone, and cocoa in a light, layered sponge cake format.


Ingredients

  • 6 large eggs, separated
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup strong brewed espresso or coffee, cooled
  • 2 tbsp coffee liqueur (optional)
  • 1 1/4 cups mascarpone cheese
  • 1 1/2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract (for cream)
  • Unsweetened cocoa powder, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line two 8-inch round cake pans with parchment paper and grease lightly.
  2. In a large bowl, beat egg yolks with half the sugar and vanilla until thick and pale.
  3. In another bowl, whisk egg whites with salt until soft peaks form. Gradually add the rest of the sugar and beat until stiff peaks form.
  4. Gently fold the egg whites into the yolk mixture. Sift in flour and baking powder, then fold gently until just combined.
  5. Divide batter between the pans and bake for 20–25 minutes, or until a toothpick comes out clean. Let cool completely.
  6. Mix the coffee and liqueur (if using) in a shallow dish.
  7. In a mixing bowl, beat mascarpone, powdered sugar, and vanilla until smooth. In another bowl, whip cream until stiff peaks form, then fold into mascarpone mixture.
  8. Slice each cake in half horizontally (to make 4 layers). Place one layer on a serving plate and brush generously with coffee mixture.
  9. Spread a layer of mascarpone cream over the cake. Repeat with remaining layers, ending with cream on top.
  10. Dust the top with cocoa powder and refrigerate for at least 4 hours, preferably overnight, before serving.

Notes

  • Use a serrated knife to slice the cake evenly for neat layers.
  • The coffee liqueur is optional but adds authentic flavor.
  • Best made a day ahead to allow the flavors to develop fully.
