- 1 lb smoked sausage, sliced into 1/2-inch rounds
- 1.5 lbs baby potatoes, halved
- 2 tbsp olive oil
- 1/4 cup brown sugar
- 2 tbsp Dijon mustard
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- In a large bowl, toss potatoes with 1 tbsp olive oil, salt, and pepper. Spread them on the prepared baking sheet and roast for 20 minutes.
- While potatoes roast, mix brown sugar, Dijon mustard, soy sauce, and garlic in a small bowl to make the glaze.
- After 20 minutes, remove the baking sheet from the oven. Add sliced sausage and drizzle everything with the glaze. Toss to coat evenly.
- Return to oven and roast for another 20-25 minutes, stirring halfway through, until potatoes are tender and sausage is caramelized.
- Remove from oven, sprinkle with chopped parsley, and serve warm.

- Yukon gold or red potatoes work best for this recipe.
