- 14 ounces smoked sausage, sliced into 1/2-inch rounds
- 1 1/2 pounds baby potatoes, halved
- 2 tablespoons olive oil
- 1 large yellow onion, thinly sliced
- 3 cloves garlic, minced
- 3 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Add halved baby potatoes, season with salt and pepper, and sauté for about 10 minutes until golden on the edges.
- Push potatoes to one side of the skillet and add onions and garlic to the other, cooking until softened.
- Stir in smoked sausage slices and allow them to brown slightly.
- In a small bowl, whisk together honey, soy sauce, and apple cider vinegar, then pour over the sausage and potatoes.
- Toss gently and cook for 3–4 minutes until the glaze thickens and coats the ingredients evenly.
- Sprinkle with fresh parsley and serve hot.
