- 2 large heirloom tomatoes, sliced
- 1 cup sungold cherry tomatoes, halved
- 150 grams soft goat cheese
- 1/4 cup grated parmesan
- 2 tablespoons olive oil
- 2 tablespoons fresh basil, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 200 degrees Celsius.
- Place puff pastry on baking sheet and score border.
- Spread goat cheese and sprinkle parmesan.
- Arrange tomatoes on top.
- Drizzle olive oil and season.
- Bake 25 to 30 minutes until golden.
- Top with basil and slice.
