Description

A flaky puff pastry tart layered with creamy goat cheese and vibrant sungold and heirloom tomatoes.


Ingredients

  • 1 large puff pastry sheet, thawed
  • 2 large heirloom tomatoes, sliced
  • 1 cup sungold cherry tomatoes, halved
  • 150 grams soft goat cheese
  • 1/4 cup grated parmesan
  • 2 tablespoons olive oil
  • 2 tablespoons fresh basil, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 200 degrees Celsius.
  2. Place puff pastry on baking sheet and score border.
  3. Spread goat cheese and sprinkle parmesan.
  4. Arrange tomatoes on top.
  5. Drizzle olive oil and season.
  6. Bake 25 to 30 minutes until golden.
  7. Top with basil and slice.
