Description

These Stuffed Sweet Potatoes with Spinach, Mushroom & Feta are a hearty and nutritious meal that’s both comforting and full of flavor. Roasted sweet potatoes are stuffed with a savory mixture of sautéed spinach, mushrooms, and creamy feta cheese. This dish is a perfect balance of earthy, tangy, and slightly sweet flavors, making it an ideal option for a wholesome lunch or dinner.


Ingredients

  • 4 medium sweet potatoes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1/2 cup crumbled feta cheese
  • Salt and pepper, to taste
  • 1 tsp dried oregano (optional)
  • Fresh parsley or thyme for garnish (optional)

Instructions

  • Preheat the oven to 400°F (200°C).
  • Pierce the sweet potatoes with a fork and place them on a baking sheet. Roast for 40-45 minutes or until soft, flipping halfway through.
  • While the potatoes are baking, heat olive oil in a large skillet over medium heat.
  • Add the chopped onion and garlic to the skillet and sauté for about 3-4 minutes, or until softened.
  • Add the sliced mushrooms and cook for another 5-7 minutes, or until the mushrooms are tender and browned.
  • Add the chopped spinach to the skillet and cook for 1-2 minutes until wilted. Season with salt, pepper, and oregano (if using).
  • Once the sweet potatoes are cooked, cut a slit down the center of each and gently mash the insides with a fork.
  • Stuff the potatoes with the spinach, mushroom, and feta mixture, dividing it evenly among the potatoes.
  • Garnish with fresh parsley or thyme, if desired.
  • Serve immediately and enjoy!

Notes

  • For added protein, you can top the stuffed potatoes with a fried or poached egg.
  • You can swap the feta cheese for goat cheese or ricotta for a different flavor.
  • If you prefer a vegan version, omit the feta cheese or use a plant-based alternative.
