- 4 medium sweet potatoes
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1/2 cup crumbled feta cheese
- Salt and pepper, to taste
- 1 tsp dried oregano (optional)
- Fresh parsley or thyme for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Pierce the sweet potatoes with a fork and place them on a baking sheet. Roast for 40-45 minutes or until soft, flipping halfway through.
- While the potatoes are baking, heat olive oil in a large skillet over medium heat.
- Add the chopped onion and garlic to the skillet and sauté for about 3-4 minutes, or until softened.
- Add the sliced mushrooms and cook for another 5-7 minutes, or until the mushrooms are tender and browned.
- Add the chopped spinach to the skillet and cook for 1-2 minutes until wilted. Season with salt, pepper, and oregano (if using).
- Once the sweet potatoes are cooked, cut a slit down the center of each and gently mash the insides with a fork.
- Stuff the potatoes with the spinach, mushroom, and feta mixture, dividing it evenly among the potatoes.
- Garnish with fresh parsley or thyme, if desired.
- Serve immediately and enjoy!
