Description

Juicy chicken filled with creamy cheese and spinach, seared to golden perfection and baked for a comforting and flavorful meal that’s easy enough for weeknights yet special enough for guests.


Ingredients

  • 4 large boneless chicken thighs or fillets
  • 2 cups fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish or oven-safe skillet with olive oil.
  2. In a bowl, mix spinach, cream cheese, mozzarella, garlic, salt, pepper, and Italian seasoning until well combined.
  3. Butterfly each chicken piece and gently flatten with a mallet. Spoon the filling into the center, fold over, and secure with toothpicks.
  4. Heat 1 tablespoon olive oil in a skillet over medium heat. Sear the stuffed chicken for 2–3 minutes per side until golden.
  5. Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken is fully cooked through.
  6. Let rest for 5 minutes, then remove toothpicks and serve warm with sides of your choice.

Notes

  • Let cream cheese come to room temperature for easier mixing.
  • Don’t overstuff to prevent leakage.
  • Use a thermometer to ensure chicken reaches 165°F internally.
