Description

Ingredients

  • 12 ounces spaghetti or fettuccine
  • 5 cups fresh spinach (packed)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • ¾ cup Parmesan cheese, freshly grated
  • Salt and black pepper, to taste
  • ½ cup reserved pasta water


Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Pour in heavy cream and bring to a gentle simmer. Stir occasionally to avoid sticking.
  4. Add spinach and cook until wilted, about 2-3 minutes. Stir in Parmesan cheese, salt, and black pepper.
  5. Add cooked pasta to the skillet and toss to coat with the sauce. Use reserved pasta water to loosen the sauce if needed.
  6. Let sit for 1-2 minutes so the sauce thickens and coats the pasta evenly.
  7. Serve hot, garnished with extra Parmesan and black pepper if desired.
