- ½ cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve ½ cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir occasionally to avoid sticking.
- Add spinach and cook until wilted, about 2-3 minutes. Stir in Parmesan cheese, salt, and black pepper.
- Add cooked pasta to the skillet and toss to coat with the sauce. Use reserved pasta water to loosen the sauce if needed.
- Let sit for 1-2 minutes so the sauce thickens and coats the pasta evenly.
- Serve hot, garnished with extra Parmesan and black pepper if desired.
