- 250 g fresh spinach, washed and drained
- 4 large eggs
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 1 tablespoon light soy sauce
Instructions
- Heat a wok or skillet over medium-high heat until hot.
- In a bowl, whisk the eggs with salt and white pepper until smooth and slightly frothy.
- Add vegetable oil to the heated pan and swirl to coat evenly.
- Sauté the minced garlic for 20–30 seconds until fragrant, then add the spinach and toss until just wilted.
- Push spinach to one side of the pan, pour in the eggs, and gently stir until they start to set.
- Fold the spinach into the eggs and drizzle with light soy sauce.
- Stir briefly to combine, then transfer to a plate and serve hot.
Notes
- Use high heat for a short time to keep spinach vibrant.
- Don’t overcook eggs; they should stay soft and creamy.
- Drain spinach well after washing to avoid excess moisture.
