Description

A quick, nourishing, and flavorful stir-fry made with tender spinach and fluffy eggs, infused with garlic and a touch of soy sauce. Perfect for any meal of the day.

Ingredients

Units Scale
  • 250 g fresh spinach, washed and drained
  • 4 large eggs
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon light soy sauce

Instructions

  1. Heat a wok or skillet over medium-high heat until hot.
  2. In a bowl, whisk the eggs with salt and white pepper until smooth and slightly frothy.
  3. Add vegetable oil to the heated pan and swirl to coat evenly.
  4. Sauté the minced garlic for 20–30 seconds until fragrant, then add the spinach and toss until just wilted.
  5. Push spinach to one side of the pan, pour in the eggs, and gently stir until they start to set.
  6. Fold the spinach into the eggs and drizzle with light soy sauce.
  7. Stir briefly to combine, then transfer to a plate and serve hot.

Notes

  • Use high heat for a short time to keep spinach vibrant.
  • Don’t overcook eggs; they should stay soft and creamy.
  • Drain spinach well after washing to avoid excess moisture.
