- 2 large ripe mangoes, peeled and chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 medium carrot, chopped
- 3 cups vegetable broth
- 1 cup coconut milk
- 1/4 cup chopped fresh scent leaf
- 1 small chili pepper, minced (optional)
- 1 tablespoon olive oil
- Salt to taste
- Juice from 1 lime
Instructions
- Heat olive oil in a large saucepan over medium heat.
- Add onion, garlic, and ginger. Sauté for about 3 minutes until fragrant.
- Stir in the chopped carrot and cook for another 3 minutes.
- Add mango chunks and pour in the vegetable broth. Bring to a simmer and cook for 10 minutes until carrots are tender.
- Stir in coconut milk, scent leaf, and chili pepper if using. Simmer for 3 more minutes.
- Transfer to a blender and blend until smooth. Return to the pot and reheat gently.
- Season with salt and lime juice. Adjust to taste.
- Serve hot, garnished with extra scent leaf or a swirl of coconut cream.
Notes
- Use very ripe mangoes for best flavor and smooth texture.
- Let the soup cool slightly before blending to avoid pressure build-up.
- Add a splash of lime juice after blending to brighten the flavors.
- This bisque freezes well for up to 2 months.
