Description

A sizzling, colorful stir-fry of tender chicken, fresh jalapeños, and sweet vegetables tossed in a savory sauce. Quick, flavorful, and perfect for busy weeknights.

Ingredients

Units Scale
  • 1 pound chicken breast, thinly sliced
  • 2 large fresh jalapeños, sliced into rings
  • 1 large red bell pepper, sliced
  • 1 medium yellow onion, thinly sliced
  • 3 garlic cloves, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1/4 cup water or chicken broth

Instructions

  1. Heat a wok or large skillet over high heat until very hot.
  2. In a bowl, whisk together soy sauce, oyster sauce, cornstarch, and water or broth.
  3. Add oil to the hot wok, swirling to coat evenly.
  4. Stir-fry chicken slices until lightly browned, then remove and set aside.
  5. In the same pan, add onions, bell pepper, jalapeños, and garlic. Stir-fry until just tender.
  6. Return chicken to the pan, pour in sauce, and stir until everything is coated and heated through.
  7. Serve immediately over rice or noodles.

Notes

  • Leave some jalapeño seeds in if you prefer extra heat.
  • Prep all ingredients ahead since stir-frying moves quickly.
  • Do not overcrowd the pan to ensure proper searing.
