- 1 pound chicken breast, thinly sliced
- 2 large fresh jalapeños, sliced into rings
- 1 large red bell pepper, sliced
- 1 medium yellow onion, thinly sliced
- 3 garlic cloves, minced
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1/4 cup water or chicken broth
Instructions
- Heat a wok or large skillet over high heat until very hot.
- In a bowl, whisk together soy sauce, oyster sauce, cornstarch, and water or broth.
- Add oil to the hot wok, swirling to coat evenly.
- Stir-fry chicken slices until lightly browned, then remove and set aside.
- In the same pan, add onions, bell pepper, jalapeños, and garlic. Stir-fry until just tender.
- Return chicken to the pan, pour in sauce, and stir until everything is coated and heated through.
- Serve immediately over rice or noodles.

- Leave some jalapeño seeds in if you prefer extra heat.
