- 1 pound ground lamb
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 red onion, finely chopped
- 1/2 cup crumbled feta cheese
- 1/2 cup plain yogurt
- 1 tablespoon lemon juice
Instructions
- Warm a skillet over medium heat and set your tortillas aside.
- In a small bowl, mix cumin, coriander, paprika, salt, and pepper.
- Add olive oil to the skillet, then add minced garlic. Cook for 30 seconds.
- Add ground lamb to the skillet and cook until mostly browned.
- Stir in the spice mix and cook until the lamb is fully browned and no longer pink, about 8-10 minutes.
- Reduce heat and simmer for 2 more minutes to blend flavors.
- In a separate bowl, mix plain yogurt with lemon juice to make a sauce.
- Warm the tortillas in a skillet or microwave.
- Assemble tacos by filling tortillas with lamb, lettuce, tomatoes, onions, feta, and a drizzle of yogurt sauce.
