Description

These Spanish Lettuce Wraps are a light, vibrant, and flavor-packed dish featuring smoky paprika-seasoned filling wrapped in crisp romaine leaves. A perfect balance of freshness and warmth, inspired by the sun-soaked Mediterranean coast of Spain.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground chicken or turkey
  • 1 medium red bell pepper, diced
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 810 large romaine lettuce leaves
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons chopped parsley
  • 1 tablespoon lemon juice


Instructions

  1. Warm a large skillet over medium heat and add olive oil.
  2. Add onion, garlic, and bell pepper, sautéing until softened and fragrant.
  3. Stir in the ground chicken or turkey, cooking until browned and crumbly.
  4. Mix in tomato paste, smoked paprika, cumin, salt, and pepper. Cook for 2–3 minutes until the flavors meld together.
  5. Remove from heat and let the filling cool slightly.
  6. Lay out romaine leaves on a tray and spoon the filling into each leaf.
  7. Top with cherry tomatoes and parsley, drizzle with olive oil and lemon juice.
  8. Serve immediately and enjoy while crisp and fresh.
