- 1 pound ground chicken or turkey
- 1 medium red bell pepper, diced

- 3 garlic cloves, minced

- Salt and pepper, to taste
- 8–10 large romaine lettuce leaves
- 1 cup cherry tomatoes, halved
- 2 tablespoons chopped parsley
- 1 tablespoon lemon juice
Instructions
- Warm a large skillet over medium heat and add olive oil.
- Add onion, garlic, and bell pepper, sautéing until softened and fragrant.
- Stir in the ground chicken or turkey, cooking until browned and crumbly.
- Mix in tomato paste, smoked paprika, cumin, salt, and pepper. Cook for 2–3 minutes until the flavors meld together.
- Remove from heat and let the filling cool slightly.
- Lay out romaine leaves on a tray and spoon the filling into each leaf.
- Top with cherry tomatoes and parsley, drizzle with olive oil and lemon juice.
- Serve immediately and enjoy while crisp and fresh.
