This indulgent S’mores Cheesecake brings the nostalgic campfire treat to your dessert table, complete with a buttery graham cracker crust, creamy cheesecake filling, rich chocolate swirls, and toasted marshmallow topping.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 2 teaspoons vanilla extract
- 3 large eggs
- 1 cup semi-sweet chocolate chips, melted
- 2 cups mini marshmallows
- 1/4 cup chocolate ganache or syrup (optional)
- Extra graham cracker crumbs for garnish
Instructions
- Preheat oven to 325°F and line the bottom of a 9-inch springform pan with parchment paper.
- Mix graham cracker crumbs and melted butter. Press into the pan to form a crust.
- In a separate bowl, beat cream cheese and sugar until smooth. Add sour cream, vanilla, and eggs one at a time. Mix in melted chocolate.
- Wrap the pan in foil and place in a larger pan filled with hot water for a water bath.
- Pour filling over crust and smooth the top. Bake for 55–65 minutes until set. Let sit in oven for 1 hour, then cool to room temperature.
- Chill in the fridge for at least 6 hours or overnight.
- Top with mini marshmallows and broil until toasted. Drizzle with ganache and sprinkle extra crumbs before serving.
