- 3–4 pounds turkey breast, boneless and skin-on
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 2 teaspoons black pepper
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Wood chips (apple or cherry)
Instructions
- Preheat your smoker to 250°F using your favorite wood chips.
- In a bowl, mix olive oil with salt, pepper, paprika, garlic powder, onion powder, and thyme.
- Place the turkey breast on a wire rack or smoker grate, skin side up. Rub the seasoning mix all over.
- Insert a drip pan if needed and place the turkey into the smoker.
- Smoke for 2.5 to 3 hours, or until internal temp reaches 165°F at the thickest part.
- Remove and tent with foil. Let it rest for at least 15 minutes before slicing.
- Slice and serve warm with your favorite sides.
