- 1.5 pounds salmon fillet
- 2 cups cherry tomatoes, halved
- 4 garlic cloves, thinly sliced
- 3/4 cup mixed olives, pitted
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 300°F (150°C).
- In a mixing bowl, toss cherry tomatoes, garlic, olives, thyme, olive oil, salt, black pepper, and red pepper flakes if using.
- Spread the tomato mixture in a baking dish.
- Place the salmon fillet, skin-side down, in the center of the dish. Spoon some tomato mixture on top.
- Roast for 35 to 45 minutes until salmon is cooked through and flakes easily.
- Remove from oven and sprinkle with fresh parsley.
- Let rest for 5 minutes before serving.
- Spoon juices and tomatoes over the salmon when serving.
