Ingredients

  • 1.5 pounds salmon fillet
  • 2 cups cherry tomatoes, halved
  • 4 garlic cloves, thinly sliced
  • 3/4 cup mixed olives, pitted
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)


Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a mixing bowl, toss cherry tomatoes, garlic, olives, thyme, olive oil, salt, black pepper, and red pepper flakes if using.
  3. Spread the tomato mixture in a baking dish.
  4. Place the salmon fillet, skin-side down, in the center of the dish. Spoon some tomato mixture on top.
  5. Roast for 35 to 45 minutes until salmon is cooked through and flakes easily.
  6. Remove from oven and sprinkle with fresh parsley.
  7. Let rest for 5 minutes before serving.
  8. Spoon juices and tomatoes over the salmon when serving.
