Description

Tender, glossy chicken thighs slow cooked in a sweet and savory honey garlic sauce that fills the kitchen with warm aromas and delivers a comforting, weeknight-friendly dinner.

Ingredients

  • Chicken thighs, boneless skinless: 2 pounds
  • Honey: 1/2 cup
  • Soy sauce: 1/4 cup
  • Ketchup: 1/4 cup
  • Garlic, minced: 4 cloves
  • Onion, chopped: 1 medium
  • Rice vinegar: 2 tablespoons
  • Cornstarch: 2 tablespoons
  • Water, for slurry: 2 tablespoons
  • Sesame seeds, toasted: 1 tablespoon
  • Green onions, thinly sliced: 2 stalks

Instructions

  1. Preheat Your Equipment: If your slow cooker has a sauté setting, preheat it, otherwise warm a skillet over medium heat.
  2. Combine Ingredients: In a mixing bowl, whisk honey, soy sauce, ketchup, minced garlic, chopped onion, and rice vinegar until smooth.
  3. Prepare Your Cooking Vessel: Lightly sear the chicken thighs in the preheated insert or a skillet for 2 to 3 minutes per side, then place them in the slow cooker.
  4. Assemble the Dish: Pour the honey soy mixture over the chicken, turning pieces so they are well coated.
  5. Cook to Perfection: Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the chicken is tender.
  6. Finishing Touches: Transfer the cooking liquid to a saucepan, whisk cornstarch with water to make a slurry, then stir it into the sauce and simmer until glossy and thickened, 2 to 4 minutes. Return sauce to the chicken.
  7. Serve and Enjoy: Garnish with toasted sesame seeds and sliced green onions, then serve hot over rice or noodles.

Notes

  • Note: Double the sauce if you love extra glaze for rice or noodles.
  • For gentle heat, add a pinch of red pepper flakes to the sauce.
  • Use tamari for a gluten-free option.
  • Sear the chicken first for deeper flavor, but you can skip this step if short on time.
