Description

- 2 pounds beef short ribs, bone-in, braised and shredded
- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 4 garlic cloves, minced
- 3 cups beef stock
- 1 pound pizza dough
- 2 cups smoked gouda cheese, shredded
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons flour
- Salt and black pepper, to taste
- 1 cup fresh arugula
Instructions
- Preheat your oven to 475°F and place a pizza stone inside to heat.
- Sear short ribs in olive oil, add onion, garlic, and beef stock, then braise at 325°F for about 2.5 hours until tender. Shred once cooled.
- In a saucepan, melt butter, whisk in flour, then add heavy cream. Stir in smoked gouda until smooth and season to taste.
- Roll out pizza dough, pre-bake for 5 minutes, then spread gouda cream sauce over the crust.
- Top with shredded short ribs and extra gouda cheese.
- Bake for 10–12 minutes until crust is golden and cheese is bubbly.
- Finish with fresh arugula, slice, and serve.
Notes
- Pre-bake crust to avoid sogginess from the cream sauce.
- Shred short ribs while warm for easier handling.
- Add mushrooms or caramelized onions for extra depth of flavor.
