Description

A rich and indulgent pizza topped with tender braised short ribs and a luscious smoked gouda cream sauce, finished with a peppery touch of fresh arugula.


Ingredients

  • 2 pounds beef short ribs, bone-in, braised and shredded
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 3 cups beef stock
  • 1 pound pizza dough
  • 2 cups smoked gouda cheese, shredded
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons flour
  • Salt and black pepper, to taste
  • 1 cup fresh arugula


Instructions

  1. Preheat your oven to 475°F and place a pizza stone inside to heat.
  2. Sear short ribs in olive oil, add onion, garlic, and beef stock, then braise at 325°F for about 2.5 hours until tender. Shred once cooled.
  3. In a saucepan, melt butter, whisk in flour, then add heavy cream. Stir in smoked gouda until smooth and season to taste.
  4. Roll out pizza dough, pre-bake for 5 minutes, then spread gouda cream sauce over the crust.
  5. Top with shredded short ribs and extra gouda cheese.
  6. Bake for 10–12 minutes until crust is golden and cheese is bubbly.
  7. Finish with fresh arugula, slice, and serve.

Notes

  • Pre-bake crust to avoid sogginess from the cream sauce.
  • Shred short ribs while warm for easier handling.
  • Add mushrooms or caramelized onions for extra depth of flavor.
