- 1 pound large shrimp, peeled and deveined
- 8 ounces Spanish chorizo, pre-cooked and sliced
- 1 bunch (12 oz) broccolini, trimmed
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: lemon wedges for serving
Instructions
- Preheat the oven to 425°F and place a large sheet pan inside while it heats.
- In a large bowl, toss shrimp, chorizo, and broccolini with olive oil, garlic, smoked paprika, salt, and black pepper.
- Carefully remove the hot sheet pan, line with parchment or grease lightly.
- Spread the mixture out in a single layer on the sheet pan.
- Roast for 15 minutes, flipping halfway, until shrimp are opaque, chorizo is crispy, and broccolini is tender and slightly charred.
- Optional: Squeeze lemon juice over everything before serving.
- Serve hot, straight from the pan or plated.
Notes
- For extra crisp, broil for the last 1–2 minutes.
- Dry the shrimp well before roasting to avoid steaming.
- Make sure ingredients are spread out evenly to avoid overcrowding.
- Add red pepper flakes for more heat.
