Ingredients
Scale
- 2 cups glutinous rice flour
- 3 tablespoons granulated sugar
- ¾ cup warm water
- 1 cup mashed taro, cooked and mashed until smooth
- 2 tablespoons granulated sugar for filling
- 3 cups neutral oil for frying
- ½ cup white sesame seeds
Instructions
- Heat 3 cups neutral oil in a deep pan over medium heat until it reaches about 325°F.
- In a mixing bowl, stir together 2 cups glutinous rice flour and 3 tablespoons granulated sugar. Gradually add ¾ cup warm water and knead until a smooth, soft dough forms.
- In a separate bowl, mix 1 cup mashed taro with 2 tablespoons granulated sugar until well combined.
- Divide the dough into 12 equal portions. Flatten each piece, place about 1 tablespoon of sweetened taro filling in the center, seal tightly, and roll into a smooth ball.
- Roll each ball evenly in ½ cup white sesame seeds, pressing gently so they adhere.
- Carefully lower the balls into the hot oil. Fry for 6 to 8 minutes, turning occasionally, until golden brown and puffed.
- Remove with a slotted spoon and drain on paper towels. Let cool slightly before serving.
Notes
- Keep the oil temperature steady to ensure even puffing and browning.
- Seal the dough completely around the filling to prevent leaks during frying.
- If the dough feels dry, add a teaspoon of warm water and knead again.
- Reheat leftovers in a 350°F oven for 5 to 7 minutes to restore crispness.
