Description

A creamy and comforting sausage and tomato risotto made with tender rice, rich tomato flavor, and savory sausage, perfect for an easy yet satisfying meal.


Ingredients

  • 1 1/2 cups arborio rice
  • 12 ounces sausage, sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 4 to 5 cups vegetable broth, warm
  • 2 tablespoons olive oil
  • 1/2 cup grated cheese
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Warm the vegetable broth in a saucepan and keep it hot.
  2. Heat olive oil in a deep pan over medium heat, add sausage, and cook until lightly browned, then remove and set aside.
  3. In the same pan, add onion and garlic and cook until soft and fragrant.
  4. Stir in the arborio rice and cook for 1 to 2 minutes until coated.
  5. Add crushed tomatoes and mix well.
  6. Add warm broth one ladle at a time, stirring gently until absorbed before adding more.
  7. Continue until the rice is tender and creamy.
  8. Stir the sausage back in along with grated cheese, salt, and black pepper.
  9. Serve warm and enjoy.

Notes

  • Keep the broth warm for best texture.
  • Stir regularly but gently to avoid breaking the rice.
  • Add a splash of broth when reheating to restore creaminess.
