Description

A creamy, decadent dessert with a rich salted caramel flavor, topped with crunchy homemade praline – a perfect blend of sweet and salty.


Ingredients

  • 1 1/2 cups heavy cream
  • 1/2 cup whole milk
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1 1/2 tsp gelatin powder
  • 2 tbsp water
  • 1/2 cup brown sugar (for salted caramel)
  • 2 tbsp butter (for salted caramel)
  • 1/4 tsp sea salt (for salted caramel)
  • 1/2 cup chopped pecans (for praline)
  • 1/4 cup granulated sugar (for praline)
  • 1 tbsp water (for praline)

Instructions

  1. In a small bowl, combine gelatin powder with 2 tablespoons of water and let it bloom for 5 minutes.
  2. In a saucepan, heat heavy cream, milk, granulated sugar, vanilla extract, and sea salt over medium heat until the sugar dissolves and the mixture is warm but not boiling.
  3. Add the bloomed gelatin to the warm cream mixture and stir until fully dissolved. Remove from heat and set aside to cool slightly.
  4. For the salted caramel: In a separate saucepan, melt brown sugar over medium heat until it begins to bubble. Add butter and stir until smooth. Remove from heat and add sea salt. Allow to cool slightly.
  5. Pour the panna cotta mixture into serving glasses or molds, then drizzle with a bit of the salted caramel sauce. Chill in the refrigerator for at least 4 hours, or until set.
  6. For the praline: In a small saucepan, combine granulated sugar and water over medium heat. Stir until the sugar dissolves and the syrup becomes golden. Add chopped pecans and stir to coat them with the caramelized sugar. Pour the praline mixture onto parchment paper and let it cool before breaking it into pieces.
  7. Once the panna cotta has set, top with praline pieces and additional salted caramel before serving.

Notes

  • Make sure the panna cotta is fully chilled before serving for the best texture.
  • Praline can be made ahead of time and stored in an airtight container for up to a week.
  • For a twist, use a different type of nut for the praline, such as almonds or walnuts.
