Description

A fresh and vibrant salad featuring crisp romaine lettuce, juicy cherry tomatoes, cool cucumber, and creamy Gouda cubes tossed in a light lemon Dijon dressing.


Ingredients

  • 6 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • 1 small red onion, thinly sliced
  • 1 cup Gouda cheese, cut into small cubes
  • 2 tablespoons sunflower seeds, toasted
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground


Instructions

  1. If toasting sunflower seeds, heat a dry skillet over medium heat and toast for 2 to 3 minutes until lightly golden, then let cool.
  2. In a large bowl, combine chopped romaine lettuce, cherry tomatoes, cucumber slices, red onion, Gouda cubes, and toasted sunflower seeds.
  3. In a small bowl or jar, whisk together olive oil, fresh lemon juice, Dijon mustard, salt, and black pepper until smooth.
  4. Pour the dressing over the salad ingredients.
  5. Gently toss until all ingredients are lightly coated with the dressing.
  6. Taste and adjust seasoning if needed, then serve immediately.
