- 1 cup cherry tomatoes, halved

- 1 cup Gouda cheese, cut into small cubes
- 2 tablespoons sunflower seeds, toasted
- 3 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper, freshly ground
Instructions
- If toasting sunflower seeds, heat a dry skillet over medium heat and toast for 2 to 3 minutes until lightly golden, then let cool.
- In a large bowl, combine chopped romaine lettuce, cherry tomatoes, cucumber slices, red onion, Gouda cubes, and toasted sunflower seeds.
- In a small bowl or jar, whisk together olive oil, fresh lemon juice, Dijon mustard, salt, and black pepper until smooth.
- Pour the dressing over the salad ingredients.
- Gently toss until all ingredients are lightly coated with the dressing.
- Taste and adjust seasoning if needed, then serve immediately.
