- 1 lb breakfast sausage (hot, mild, or turkey)
- 8 oz block of cream cheese, softened
- 1 can Rotel diced tomatoes and green chiles, well drained
- 1 1/2 cups baking mix (like Bisquick)
- 2 cups Mexican blend shredded cheese
Instructions
- Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine sausage, cream cheese, drained Rotel, baking mix, and shredded cheese. Mix thoroughly by hand or use a stand mixer with dough hook attachment until well blended.
- Using a small cookie scoop or spoon, form mixture into 1-inch balls and place on the prepared baking sheet.
- Bake for 18–20 minutes or until golden brown and cooked through.
- Serve warm. If baking from frozen, add 2 extra minutes to cook time.
Notes
- For spicier sausage balls, use hot sausage and spicy Rotel.
- These can be frozen raw or baked and reheated.
- Great served with ranch, salsa, or sour cream for dipping.
