Description

These cheesy sausage balls are packed with savory sausage, cream cheese, Rotel tomatoes, and a zesty Mexican cheese blend. Perfect for breakfast, brunch, game day, or parties, they’re quick to make and even easier to devour!


Ingredients

  • 1 lb breakfast sausage (hot, mild, or turkey)
  • 8 oz block of cream cheese, softened
  • 1 can Rotel diced tomatoes and green chiles, well drained
  • 1 1/2 cups baking mix (like Bisquick)
  • 2 cups Mexican blend shredded cheese

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine sausage, cream cheese, drained Rotel, baking mix, and shredded cheese. Mix thoroughly by hand or use a stand mixer with dough hook attachment until well blended.
  3. Using a small cookie scoop or spoon, form mixture into 1-inch balls and place on the prepared baking sheet.
  4. Bake for 18–20 minutes or until golden brown and cooked through.
  5. Serve warm. If baking from frozen, add 2 extra minutes to cook time.

Notes

  • For spicier sausage balls, use hot sausage and spicy Rotel.
  • These can be frozen raw or baked and reheated.
