- 2 cups fresh cherries, pitted
- 3 tablespoons granulated sugar
- 1.5 liters vanilla ice cream, slightly softened
- 200 grams dark chocolate cookies, crushed
- 100 grams unsalted butter, melted
- 1 cup shredded coconut
- 100 grams dark chocolate, melted
Instructions
- Preheat the oven to 200°C and line a baking tray.
- Toss the pitted cherries with granulated sugar until evenly coated.
- Spread cherries on the tray and roast for 20 minutes until soft and glossy, then let cool completely.
- Mix crushed dark chocolate cookies with melted butter and press firmly into the base of a lined springform pan.
- Spread half of the softened vanilla ice cream over the crust.
- Spoon roasted cherries evenly over the ice cream layer.
- Sprinkle shredded coconut and drizzle melted dark chocolate over the cherries.
- Top with the remaining vanilla ice cream and smooth the surface.
- Freeze for at least 6 hours or until fully set.
- Remove from the pan, slice, and serve.
Notes
- Let the cake sit for a few minutes before slicing for cleaner cuts.
- Use a warm knife for neat layers.
- Store tightly covered to avoid ice crystals.
