Description

Soft, chewy mochi filled with gently sweet red bean paste, simple, comforting, and perfect with tea.


Ingredients

  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 3/4 cup water
  • 1/2 cup sweet red bean paste
  • 1/4 cup cornstarch


Instructions

  1. In a microwave-safe bowl, combine glutinous rice flour, sugar, and water, stirring until smooth.
  2. Cover loosely and microwave for 1 minute, then stir well.
  3. Return to the microwave and heat in 30-second intervals, stirring each time, until the mixture becomes thick, glossy, and stretchy.
  4. Dust a clean surface with cornstarch and transfer the hot mochi dough onto it.
  5. Lightly dust the top with more cornstarch and flatten gently.
  6. Cut the dough into equal portions.
  7. Place a small amount of sweet red bean paste in the center of each piece.
  8. Carefully wrap the dough around the filling and pinch to seal.
  9. Shape gently into smooth rounds and serve.

Notes

  • Work with the dough while it is warm for easier shaping.
  • Use only a light dusting of cornstarch to avoid drying the surface.
  • Best enjoyed the same day for the softest texture.
