- 1/4 cup sugar
- 3/4 cup water
- 1/2 cup sweet red bean paste
- 1/4 cup cornstarch
Instructions
- In a microwave-safe bowl, combine glutinous rice flour, sugar, and water, stirring until smooth.
- Cover loosely and microwave for 1 minute, then stir well.
- Return to the microwave and heat in 30-second intervals, stirring each time, until the mixture becomes thick, glossy, and stretchy.
- Dust a clean surface with cornstarch and transfer the hot mochi dough onto it.
- Lightly dust the top with more cornstarch and flatten gently.
- Cut the dough into equal portions.
- Place a small amount of sweet red bean paste in the center of each piece.
- Carefully wrap the dough around the filling and pinch to seal.
- Shape gently into smooth rounds and serve.
Notes
- Work with the dough while it is warm for easier shaping.
- Use only a light dusting of cornstarch to avoid drying the surface.
- Best enjoyed the same day for the softest texture.
