Description

A delicious twist on the classic tiramisu, with layers of ladyfingers, mascarpone cheese, and fresh raspberries for a fruity and creamy dessert.


Ingredients

  • 1 pint fresh raspberries
  • 1 package ladyfingers
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong coffee, cooled
  • 1 tablespoon rum (optional)
  • Cocoa powder for dusting

Instructions

  1. In a bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and thick.
  2. In another bowl, mix the cooled coffee and rum (if using).
  3. Quickly dip each ladyfinger into the coffee mixture, one at a time, and layer them at the bottom of a serving dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Top with half of the fresh raspberries.
  6. Repeat the process with another layer of dipped ladyfingers, mascarpone mixture, and raspberries.
  7. Cover and refrigerate for at least 4 hours, preferably overnight, to let the flavors meld.
  8. Before serving, dust the top with cocoa powder and garnish with additional raspberries.

Notes

  • For a stronger coffee flavor, use espresso instead of regular coffee.
  • If you prefer a non-alcoholic version, simply skip the rum.
  • Make sure the ladyfingers are dipped quickly to prevent them from becoming soggy.
