- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup strong coffee, cooled

- In another bowl, mix the cooled coffee and rum (if using).
- Quickly dip each ladyfinger into the coffee mixture, one at a time, and layer them at the bottom of a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Top with half of the fresh raspberries.
- Repeat the process with another layer of dipped ladyfingers, mascarpone mixture, and raspberries.
- Cover and refrigerate for at least 4 hours, preferably overnight, to let the flavors meld.
- Before serving, dust the top with cocoa powder and garnish with additional raspberries.
Notes
- For a stronger coffee flavor, use espresso instead of regular coffee.
- If you prefer a non-alcoholic version, simply skip the rum.
- Make sure the ladyfingers are dipped quickly to prevent them from becoming soggy.
