- 500g chicken breast
- Chicken Marinade:
- 1/4 tsp salt
- 1/4 tsp smoked paprika
- 1/4 tsp red onion powder
- 1/4 tsp white pepper
- Wet Batter:
- 46ml flour
- 1/2 tbsp cornstarch
- 1 egg
- 40ml water
- Breading:
- 1 1/2 cup (213g) all-purpose flour
- 1/4 cup cornstarch
- 1/4 tsp salt
- 1/4 tsp red onion powder
- 1/4 tsp white pepper
- 1/4 tsp smoked paprika
Instructions
- Cut the chicken breast into thin steaks and tenderize using a kitchen mallet, bottle, or back of a knife.
- Marinate the chicken with salt, smoked paprika, red onion powder, and white pepper. Let sit for 30 minutes.
- In a bowl, whisk together flour, cornstarch, egg, and water to make the wet batter.
- In another bowl, mix all the breading ingredients. Stir well.
- Sprinkle some of the wet batter into the breading mix and stir with a fork to create little lumps for that signature KFC texture.
- Heat oil to 180°C (356°F).
- Dip the marinated chicken into the wet batter, then coat in the breading flour.
- Fry for 5–7 minutes until golden brown and cooked through.
- Let the oil return to temperature before frying the next batch. Sieve oil if necessary.
- Place fried chicken on paper towels to drain excess oil. Serve hot!

- For extra crispiness, double dip: batter → breading → batter → breading.
- Use a thermometer to maintain oil temperature between batches.
- Pairs well with fries, coleslaw, or mashed potatoes.
- Chicken thighs or drumsticks can also be used for variety.
