  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder (optional)
  • Vegetable oil for frying

Instructions

  1. Place chicken pieces in a bowl and cover with buttermilk. Let marinate for at least 30 minutes (or overnight for best flavor).
  2. In another large bowl, mix flour with paprika, garlic powder, onion powder, thyme, salt, black pepper, and chili powder.
  3. Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the seasoned flour mixture, pressing to coat thoroughly. Let coated chicken rest for 10 minutes.
  4. Heat about 2 inches of vegetable oil in a large skillet or deep fryer to 350°F (175°C).
