- 6 tablespoons ice water
- 1 cup pumpkin puree
- ½ cup brown sugar

- 1 teaspoon vanilla extract
- 1 egg (for brushing)
- ¾ cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon cinnamon
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour and salt. Cut in the cold butter until the mixture becomes crumbly.
- Add ice water gradually until the dough forms. Divide into two rectangles and roll out to 1/8-inch thickness.
- In a separate bowl, mix pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract to create the filling.
- Spoon filling onto one sheet of dough, cover with the other, press edges with a fork to seal.
- Brush tops with beaten egg and bake for 25–30 minutes or until golden brown.
- Mix powdered sugar, milk, and cinnamon to make the glaze. Drizzle over cooled tarts and enjoy.
