Pumpkin Pecan Bars are a cozy fall dessert combining the creamy warmth of pumpkin, the crunch of toasted pecans, and a soft buttery crust in one irresistible bite.

- 2 cups all-purpose flour
- 1 cup unsalted butter, melted
- 1 cup brown sugar
- 3/4 cup granulated sugar
- 1 can (15 oz) pumpkin puree
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 1 1/4 cups pecans, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- In a bowl, mix the flour, melted butter, and brown sugar until crumbly. Press the mixture into the bottom of the prepared pan.
- Bake the crust for 15 minutes, then remove and let cool slightly.
- In another bowl, whisk together pumpkin puree, eggs, granulated sugar, vanilla, pumpkin pie spice, and salt.
- Pour the filling over the baked crust and sprinkle chopped pecans evenly on top.
- Bake for 35 to 40 minutes or until the center is set and a toothpick comes out mostly clean.
- Let cool for at least an hour, then chill in the fridge before slicing.
- Cut into squares and serve cold or at room temperature.
Notes
- Use parchment paper for easy removal and slicing.
- For deeper flavor, chill the bars overnight before serving.
- Toast pecans before adding for enhanced crunch and flavor.
