Description

Pumpkin Pecan Bars are a cozy fall dessert combining the creamy warmth of pumpkin, the crunch of toasted pecans, and a soft buttery crust in one irresistible bite.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 can (15 oz) pumpkin puree
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 1/4 cups pecans, chopped


Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, mix the flour, melted butter, and brown sugar until crumbly. Press the mixture into the bottom of the prepared pan.
  3. Bake the crust for 15 minutes, then remove and let cool slightly.
  4. In another bowl, whisk together pumpkin puree, eggs, granulated sugar, vanilla, pumpkin pie spice, and salt.
  5. Pour the filling over the baked crust and sprinkle chopped pecans evenly on top.
  6. Bake for 35 to 40 minutes or until the center is set and a toothpick comes out mostly clean.
  7. Let cool for at least an hour, then chill in the fridge before slicing.
  8. Cut into squares and serve cold or at room temperature.

Notes

  • For deeper flavor, chill the bars overnight before serving.
  • Toast pecans before adding for enhanced crunch and flavor.
