Description

A buttery lattice tart layered with creamy sweetened cheese and glossy pineapple jam, baked until golden and perfectly balanced between rich and fruity.


Ingredients

  • 2 cups all purpose flour
  • 150 grams unsalted butter, cold and cubed
  • 1/2 cup powdered sugar
  • 1 large egg yolk
  • 200 grams cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup pineapple jam


Instructions

  1. Preheat oven to 180 degrees Celsius and lightly grease a 9 inch tart pan.
  2. In a mixing bowl, combine all purpose flour and powdered sugar. Rub in cold butter until the mixture becomes crumbly. Add egg yolk and mix until a soft dough forms.
  3. In a separate bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  4. Press two thirds of the dough evenly into the base and sides of the prepared tart pan.
  5. Spread the cream cheese mixture evenly over the crust.
  6. Gently spread the pineapple jam over the cheese layer.
  7. Roll out the remaining dough and cut into strips to form a lattice pattern over the top.
  8. Bake for 30 minutes or until the crust is golden and the filling is set.
  9. Allow the tart to cool completely before removing from the pan and slicing.

Notes

  • Chill the dough for 20 minutes if it feels too soft to handle.
  • Use thick pineapple jam to prevent a runny topping.
  • Let the tart cool fully for clean slices and well defined layers.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
