- 2 cups all purpose flour
- 150 grams unsalted butter, cold and cubed
- 1/2 cup powdered sugar
- 1 large egg yolk
- 200 grams cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup pineapple jam
Instructions
- Preheat oven to 180 degrees Celsius and lightly grease a 9 inch tart pan.
- In a mixing bowl, combine all purpose flour and powdered sugar. Rub in cold butter until the mixture becomes crumbly. Add egg yolk and mix until a soft dough forms.
- In a separate bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Press two thirds of the dough evenly into the base and sides of the prepared tart pan.
- Spread the cream cheese mixture evenly over the crust.
- Gently spread the pineapple jam over the cheese layer.
- Roll out the remaining dough and cut into strips to form a lattice pattern over the top.
- Bake for 30 minutes or until the crust is golden and the filling is set.
- Allow the tart to cool completely before removing from the pan and slicing.
Notes
- Chill the dough for 20 minutes if it feels too soft to handle.
- Use thick pineapple jam to prevent a runny topping.
- Let the tart cool fully for clean slices and well defined layers.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
