Description

  • 4 to 5 medium plums, pitted and thinly sliced
  • 1/2 cup packed brown sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk


Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Sprinkle brown sugar evenly over the bottom of the pan and dot with a few pieces of butter. Arrange plum slices in a circular pattern over the sugar.
  3. In a bowl, whisk together flour, baking powder, and salt.
  4. In a separate bowl, cream together the butter and granulated sugar until fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until smooth.
  6. Pour the batter gently over the plums and spread evenly with a spatula.
  7. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10–15 minutes. Run a knife around the edge and invert onto a serving plate.
  9. Serve warm or at room temperature, optionally with whipped cream or ice cream.
