Description

Pistachio Shortbread Bars are a delightful twist on traditional shortbread, with a rich buttery texture and the earthy flavor of pistachios. These bars are simple to make and perfect for snacking or as a dessert treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 cup pistachios, chopped
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chopped pistachios (for topping)

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line a 9×9-inch baking pan with parchment paper.
  2. In a large mixing bowl, cream together butter and powdered sugar until light and fluffy.
  3. Add the flour, chopped pistachios, vanilla extract, and salt to the butter mixture. Stir until combined and a dough forms.
  4. Press the dough into the prepared baking pan, smoothing the top with a spatula.
  5. Sprinkle the chopped pistachios evenly on top of the dough, pressing them lightly into the surface.
  6. Bake in the preheated oven for 25–30 minutes, or until the edges are golden and the center is firm.
  7. Allow the bars to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares or bars.

Notes

  • For extra flavor, you can add a pinch of cardamom or cinnamon to the dough.
  • If you prefer, you can substitute the pistachios with another nut, such as almonds or walnuts.
  • These bars can be stored in an airtight container for up to one week.
