- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1/2 cup pistachios, chopped
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup chopped pistachios (for topping)
Instructions
- Preheat your oven to 180°C (350°F). Grease and line a 9×9-inch baking pan with parchment paper.
- In a large mixing bowl, cream together butter and powdered sugar until light and fluffy.
- Add the flour, chopped pistachios, vanilla extract, and salt to the butter mixture. Stir until combined and a dough forms.
- Press the dough into the prepared baking pan, smoothing the top with a spatula.
- Sprinkle the chopped pistachios evenly on top of the dough, pressing them lightly into the surface.
- Bake in the preheated oven for 25–30 minutes, or until the edges are golden and the center is firm.
- Allow the bars to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares or bars.
Notes
- For extra flavor, you can add a pinch of cardamom or cinnamon to the dough.
- If you prefer, you can substitute the pistachios with another nut, such as almonds or walnuts.
- These bars can be stored in an airtight container for up to one week.
